What's the default texture size of the hedgehogs in DoD:S?

Well technically you're both right AND both wrong also.
2048x1024 is the default size of the plain hedgehog. I have no idea why it's that large, especially because......
1024x512 is the size of the "snow" hedgehog texture. Guess they forgot to reduce the original when the game shipped.

And after a quick look I can see that with a different unwrap of the model - reusing areas of the skin (you can't see both sides of the beams at the same time) - you could easily get it into a 512x512.
