It's just a hat. Like on the default Unteroffizier and Scharfshutze models (yes, I'm not German and I took the time to spell those out correctly).

Edit: for some reason I thought you were talking about the hat. Anyways, it doesnt look much different from the default DOD models.

It just looks like the Dod Unteroffizier with greenish gray instead of just gray

nag is right, i guess...

this is a Waffen SS smock with summer pattern, but I'm not really sure, because smocks were used by other german units as well.
It's summer camo... that's all I'm definitly sure about.

It's not a smock, it's definitely a Dot Cammo Tunic like Nag posted, but like Rock Star mentioned, most likely a summer pattern. It's also definitely SS, the Heer and Luftwaffe didn't use the dot patterns. They prefered the Slinter and Tan & Water patterns.

People can nitpick about SPR a lot, but the last scene, most of the German soldiers are from a very well known reenactment group in England, they've been in countless productions, really top notch guys. Although, I don't think I've ever seen a pattern that light in person (I heard they were issued a lot of uniforms, but Spieldberg did use their half-track).

http://www.1944militaria.com/ is a great source for WW2 German militaria, especially uniforms.

http://www.lostbattalions.com/ also has some good stuff, but not so much cammo.

By the way, if you want to be historically accurate, don't put a hat on combat troops, DoD has it wrong and so does that screen cap. Even German NCOs and officers wore helmets. It's kind of become some kind of thing people think with so much media supporting the hat idea, which is likely because they do look nifty.
