Prepare to be raped by one anger Pole lol
Seriously though, I don't think you'll get a straight answer here mate as ripping parts from MOH is usually frowned upon. Thats not to say people haven't done it before mind so somone might prove me wrong and help you out.

It's O.K for your own personal use as long as you actually own both games.
What gets you into hot water is if you try and release any of your work publically.

Andy, I've never done this but im taking an educated guess based on my experiance.
First you need a program or plugin to convert a MOH model to a something you can work with. I think milkshape might have some (?) I don't really know which programs you can get plugins for.
Second, when you've imported your MOH model, you have to assign the HL skeleton and apply the bones to the model. To get the skeleton you need to decompile a DOD model and open the reference.smd, the model to decompile depends on what you are converting, if you are converting the Enfield sniper you should decompile the DOD Enfield sniper model. After you have copied the skeleton to the MOH model, assign the bones (as said before). Then when you have the MOH model with the assigned DOD skeleton, take all the animation smd's from you decompiled DOD model and put them in the folder with your new MOH converted model. Edit the QC if required (more info later on) then compile.
That's pretty complicated I know, sorry if you can't understand it.
Compiler and Decompilers are available in one of the stickies, on the subject of QC editing it's best to PM someone like Devin Kryss (if he's still on the boards). He would probably know something about QC files as he's done numerous hackjobs. I also think he did a few RTCW converts and should be able to help you with the conversion process. (RTCW and MOH are both based off the Q3 engine and I think the model system is pretty similar, can someone comment on this?)

That's something general for hacking... the basics -
if the game you wanna hack/convert w/e the model from is using some kind of special archive such as GCF for steam and it's games or .mdl for "ziped" hl models you will need to find a way to open those files and gain access to the real stuff the reference file/s.
just like the decompiler for hl models or the GCFScape that opens the steam archives you will need to find the suiting extracting tool for the game and it's models (or sounds/textures/maps and anything for a matter of fact).
while some games have simple archives that usualy have some extractors on the "market" :P or some custom coded ones, other games have ones that are very hard to open ( my Not so educated guess will be that those files types are just locked in some way that makes it very hard for coders to break or to find the archiving method or the developers just didn't want anything to get their dirty hands on those materials, unlike other games that except their games to be modded to get some extra $$$ out of them, ERM CS ).
alright so... you got some way to extract it, you have the model but you can't open it in the 3D modeling program you work (MS3D, 3DSM, Maya, Rhino... w/e), look for import plug ins for your program, once you got the plug in use it and get the model.
you got it now, save it.
open the model from the game you want it to be, if it's a player model... open an original player model, now... delete everything there and leave the skeleton, then import your hacked model and start assigining each vertex to the right bone that fits, learning the way the old model was assigned to the bones could help a lot.
also one more thing, some games like CoD have textures in diffrent files and they are not packed together with the model so there are other exporter/importers for those stuff, CoD's textures for example could be imported into PS with a help of a plug in.
It's pretty simple hacking after all, you just need the proper tools.

Don't bother with tryin with milkshape, they well and truely **** up! I gave up after a few attempts as the vertices quiet messed about. If you do though u will need to heavily edit it.
