need clarification here:
Since the update exactly how did spawn protectin change? Are there invisible walls that stop bullets and grenades?
Does this change apply only to stock maps or all custom maps?

Stock maps only, although customs can utilize it if they want to (mapper implemented).
I don't think they stop bullets and grenades though, just prevent players from passing.

and you also get stuck to these invisible walls if you try to get into spawn!
Kind of like a fly trap :)

its valves way of saying "Don't spawn camp noob"
I would like to take the opportunity to tell all mappers to stop using kill triggers to prevent spawn camping in their maps as it's extremily annoying and deters the map's gameplay. Use the new spawn protection triggers instead, please! :D

I prefer the kill switch, as (at least in my maps) it's always preceded by a warning like "Axis Spawn, Turn Back Now", or something similar in bright colored letters.
Heed the warning, or pay the price.
Alternatively, I've used the teleporter as well, but not to zip you back to your spawn, or to some holding cell for a short time, ..nope, ...it teleports you 200 feet above the center of the map.
This way the illiterate spawn-camping trespasser looks more like a poor unfortunate para-troop who's shoot didn't open.:D
Unless they like the freefall, it usually does the trick.

Okay, more clarification:
Is it possible then to make an invisible wall through which players of one team can pass one-way but no other objects such as enemy, grenades or bullets can pass either direction? (don't want to make an invulnerable shield people can shoot out of)
I believe the new spawn protection entities work like player-clips

the func_teamwall doesn't block nades or bullets so what you should be doing is a mixture between old style blocking so players can't see over into the spawn and a func_teamwall
